Description

Leave the resorts behind and embark on a small-group journey through Gran Canaria's rural southeast. Begin among the historic salt pans of Tenefé, where Atlantic water, sun, and wind still shape a living island craft. Walk through the historic Tenefé salt pans and learn how seawater, wind, sun, and craft work together. Continue to the ancient granary caves of La Audiencia. Discover how ancient Canarian communities stored and protected grain at La Audiencia. Rather than presenting a list of dates, your guide helps you read the landscape: the steep terrain, the need to protect food, and the knowledge required to organize a community on a volcanic island. Finish with a local producer at La Jaira de Ana, where you will make your own goat cheese, visit the farm, and enjoy a tasting, featuring a selection of local artisan cheeses with different textures and flavours, accompanied by olives and a fresh tomato salad made with simple, local ingredients. The tasting also includes water and one glass of wine or beer per person. A soft drink may also be available, subject to availability. Meet the people behind a working local farm, make your own goat cheese, visit the animals, and learn why each step of the process matters. The day ends with a tasting, and the cheese you made is prepared for you to take away.
